There is no doubt that Allison took a non-conventional route to a highly- specific career in gourmet specialty food. For more than 13 years she has been an energy policy wonk by day, chocolatier by night.

Fueled by her love of culinary arts and her passion for good chocolate, Allison got her start in making chocolate armed with a Culinary Institute of America textbook and a double boiler.

In 2005, from Allison’s initial experiments with chocolate (that won over her now husband!), she began regularly cranking out her world-class confections that have elicited continuous requests by friends, family, acquaintances, and the occasional wine bar for more, tasty creations year after year.

After a lot of dreaming and even more planning, Alli officially launched Saratoga Chocolate Co. with her husband Hank in 2016.


Saratoga Chocolate is the brainchild of foodies and chocolate-aficionados Allison and Henry Rose. For the Roses, food is an expression of love. For Allison, chocolate has been the labor of that love for over 12 years.

We take care to pair the perfect chocolate – single origin or blended – with supremely matched flavors that create confections that are unequaled in the industry.
