It takes more than just incredible chocolate to make a bark that wows. For each of our barks, we carefully choose supporting ingredients that pair with and elevate the flavor of the chocolate, and it’s time we give those unsung heroes the spotlight.
Freeze-dried fruit for the win
We love to add freeze-dried raspberries, strawberries and cherries to our chocolate to bring out its rich cocoa tasting notes and creamy texture. Whether they are paired with dark, milk or white chocolate, the berries’ natural sugar complements the sweetness of the chocolate while their tartness plays against it. They give the bark a bright, fresh flavor.
We use the finest freeze-dried fruit in our barks because it’s the best way to capture the flavor, color and nutrients (up to 90%) of fresh fruit without adding sugar or water. In the freeze-drying process, fresh berries are frozen to sub-zero temperatures and dried using a vacuum pump. The moisture in the berries transforms from ice to vapor (or, sublimes… if you’re a chemist) and is completely removed, leaving the berries dry and crisp but with their color, shape and taste intact. It’s the perfect way to add flavor, nutrition and texture to our bark.
Roasted nuts strike the balance
To round out the tasting notes of our chocolate and freeze-dried berries, we love to add roasted almonds, pistachios and hazelnuts to our barks. The salty, earthy flavor and crunchy texture of the nuts strikes the perfect balance with the sweet and tart flavors and smooth and crisp textures of the chocolate and berries. They lend the bark a savory crunch.
We use the highest-quality roasted nuts in our barks because roasting nuts heightens the natural taste and aroma of the nuts and gives them a dry, crunchy texture. While we choose the nuts we use for their flavor and how they pair with our chocolate, we don’t mind at all that they’re rich in fiber, protein, nutrients and unsaturated fats and add a nutritional boost to the bark.
